Cream of Broccoli Soup
2 to 3 large carrot, chopped
3 stalk celery, chopped
1 onion, peeled and chopped
4 medium potatoes, peeled and chopped
4 C. chicken stock
1 large head broccoli, cut in flowerets and chopped
1 ½ C. Almond milk or milk of choice, unsweetened.
Salt and pepper to taste
Add cheese of choice if desired (Optional)
Combine all vegetables with the chicken stock in a saucepan and bring to a boil. Reduce heat and simmer, covered, 20 minutes or until tender. Transfer soup and half of the broccoli into a food processor and blend until only slightly chunky.
Return soup to the pan and blend in the milk. Bring to serving temperature and season with salt and pepper. If it is too thin, boil out a little liquid while stirring constantly.
This recipes also works well in a crockpot.
